For Christmas Horse Treats, use peppermint oil for best results (crushed
peppermint canes will melt in the oven, and will not work well!) For year
round horse yummies – can use optional diced carrots and/or diced apples.)

Sher Olson's Horse Cookies
1.5 cups carrot, grated or diced (optional)
1.5 cups apple, fine diced, skin on (optional)
2 tablespoons vegetable oil (can substitute corn oil)
¼ cup molasses (dark or light)
1 teaspoon salt
1 cup Sweet Mix (horse grain) (can substitute rolled oats or oat
meal)
1 cup All Purpose Flour
Preheat oven to 350 degrees. Cover a cookie sheet with a sheet of
aluminum foil, then spray a thin layer of canned cooking oil on the foil. (Spray
on oil is easier for clean up later!) In a large bowl, mix all dry
ingredients thoroughly. Mix in the apples and carrots, so that the pulp bits do
not stick together. In a small bowl, whisk molasses and oil. Will look
like it is not enough wet – but as you thoroughly mix by hand, will see it is
just enough for a good thick dough! ** Depending on my ingredient choice –
sometimes I might need to add a little bit of water, to reach this
consistency.
For quick n' easy cookies:
Pinch off dough, roll in your palms about a 1 ½" ball. Press onto the
cookie sheet to ½ " tall. Wash sticky goo from hands about every other
cookie.
Or for shaped cookies:
Place a cookie cutter onto the cookie sheet (use whatever shape you wish.)
Press dough into the cutter, then lift the cutter. (Do not roll dough
out and try to cut dough with the cookie cutter – this does not work.) Scrub
the cookie cutter with water, cleaning off completely any goo left over –
do this about every other cookie. Yep, you have to clean between every
other cookie, or the dough will begin to stick to the cutter, making a
sticky mess. J I simply finger scrub the cutter under a running kitchen
sink – or, can use a bowl of water to rinse with instead.
Next, space cookies about ½" apart on the sheet. Cook for 20 minutes.
Let cool completely. Twist cookie as you lift it off of the sheet. The
twist prevents any chunks breaking off onto the foil sheet. Store in a
fridge, as these yummie treats are perishable after a few hot summer days in the
barn, or longer on cold winter days.
