Not sure how far you'd like to travel, but where I live there are TONS of choices. I live on the central Coast in california in San Luis Obispo county. There is Santa Margarita Lake which your husband can spend the day fishing in, and I can take you riding on my haflingers there as well, or Lake San Antonio which is a bit bigger but can still fish and ride.
Also there are some places where you can go deep sea fishin if your husband would lik that. I can ask my stepdad where he goes. He used to go deep sea fishing off the coast here somewhere, and I can also take you Riding at Montana de Oro, a horse camp ground that includes mountian trails and beach riding. It is over 8000 acres and TONS of fun. I know those trails now like the back of my hand.
There i also the riverbed which you can ride in and can be quite fun.
Just an idea on my area. The beach is my favorite place to go. and if you fly out here I've got 7 horses to choose from to ride! 5 being haflingers. Have a fun vacation where ever you choose to go!
GOogle those places I mentioned...there is also Lake Nacimento where your husband can fish but I don't think horses can go there...course I haven't tried.
