Not Emily, but "gray" if it was a true graying and not something else, is (I'm pretty sure) a dominant gene. The only explanations I can think of (and no aspersions on your "honor" -speaking in generalities) are a mutation or "somebody jumped a fence someplace" and the registered sire is not the true sire (which would be unlikely with DNA testing). What's left is a color change of a recessive sort that is not true gray (so could have sat in the gene pool a LONG time before being expressed?)?

I had two white Maned Registered Haflingers..Breed to my White maned
Afghan's Standard ROA Stallion that I still have and with much surprise..the
little colt had a Flaxen main! with a Flaxen tail.......then turned
gray...what do you think?
