I also found that they could be a little hyper and fidgety at first, it seems to take a while for them to settle into a new home and get used to new people, consistent handling and patience are the keys.
As to putting wieght on, only had to do that once, and went through the usual procedure, getting her teeth checked and floated, then worming, which we did in a split dose to avoid the potential overload problem. I was lucky and had good quality Alfa hay on hand, so was able to offer her free choice grass hay, then hand feed alfa twice a day.
For a ration I used a little soaked beet, senior food, and started with an oil, but then switched to Black Oil Sunflower Seeds, as both a coat conditioner and to add weight. I had some trouble getting her to clean up with when using the oil, had to increase to quantity very gradually, and i hated the oil film in the buckets and pans, which is why I switched to the BOSS.
Good luck with her, just build her up slowly and steadily, she'll do fine
